COOKIES AND CREAM HOT CHOCOLATE

Cookies and Cream Hot Chocolate.. AKA the best hot chocolate I’ve ever had. Creamy hot chocolate with the addition of crushed Oreos? Yes, I’m serious. It’s as amazing as it sounds. If you have been reading my blog for some time, you’ll know how in love with hot chocolate I am. I didn’t think my obsession could get worse.. until now. This drink is rich, creamy and absolutely delicious. The addition of the Oreos is the perfect touch!



I love how just one simple little twist can make SUCH a huge difference. The Oreos give this hot chocolate the most delicious flavor. If you love Oreos, you will adore this drink. It’s like drinking liquid Oreos. Well, I guess that doesn’t sound that appetizing, but it is. It totally is.

Ingredients:


  • 2 cups whole milk
  • 1/2 cup hot chocolate mix (homemade or store-bought)
  • 6 Oreo cookies
  • whipped cream for garnish, optional
  • additional crushed oreos for garnish, optional

Instructions:


In a small saucepan, heat milk until very hot but not boiling. Alternately, you can heat the milk in the microwave. In the pitcher of your blender, add hot milk, oreos and hot chocolate mix. Pulse until cookies are completely ground and there are no large pieces. Pour into two mugs and garnish with whipped cream and crushed cookies, if desired.

RAINBOW SANGRIA

Ever since my friends and I met for a tapas happy hour at our neighborhood Spanish restaurant a few weeks ago, I’ve had sangria on my mind.  Mmmmsangria.  Everything about that drink makes me happy — the fresh fruit, the sweetness paired with dry wine, and of course the colors.  If you’ve read this blog before, you know that I have a thing for color.  ;)


So of course, when I found myself in the fruit section at the market this week trying to decide what kind of sangria to make for our weekly neighbor night, I immediately thought of sangria.  But then I was immediately paralyzed by indecision, based 100% on color palates.  Should I make a red sangria with lots of strawberries and pomegranates?  Or a yellow sangria with pineapple and lemons and apples?  Or a cool-toned sangria, with kiwi and blueberries and blackberries and such?  Or…

INGREDIENTS:

  • 1 refrigerated bottle dry white wine
  • 3 Tbsp. granulated sugar or honey
  • 2 Tbsp. lime juice
  • 8 cups diced rainbow fruit (*see note below*)
  • 2 oz. brandy (optional)
  • 1/2 cup club soda or ginger ale (optional)

DIRECTIONS:

In a pitcher (or in the wine bottle), combine wine, sugar/honey, lime juice, and stir until combined.

Add fruit to your serving glasses or (separate) pitcher in your desired color order. Then pour the wine over the fruit until the fruit is covered. Refrigerate the drinks for 15 minutes to let the flavors meld. Or serve immediately if you’re feeling impatient. ;)

No Bake Oreo Dessert Recipe

A HUGE hit at any family gathering, this No Bake Oreo Dessert is a quick and easy no-bake dessert you’re gonna love!


If your family is anything like my family…they LOVE Oreos and anything that contains Oreos.  That’s why when I tried this scrumptious No Bake Oreo Dessert Recipe that our Pastor’s wife made at Church, I KNEW I had to have the recipe to share with you all!

Ingredients

  • 1 pkg Oreos
  • ½ stick butter - melted
  • One 8 ounce pkg cream cheese – softened
  • 2 small pkg vanilla INSTANT pudding – note: do not make the pudding AND use the milk below. Only add the 3 cups in these directions.
  • One 8 ounce container of Cool Whip
  • 3 cups milk TOTAL – SEE note below
  • 1 cup sugar


Instructions
Crush Oreos and place in a 9×13 pan - saving a few for topping
Pour melted butter over Oreos
In a large bowl, mix pudding & milk together until it thickens. Add softened cream cheese, and sugar and mix well.

Fold Cool Whip into pudding mixture and spread over Oreos
Sprinkle remaining crushed Oreos on top.

Best Ever Tuna Salad Sandwich

CANNED TUNA FOR TUNA SALAD
A good tuna salad sandwich starts with the the tuna salad. And a good tuna salad must have high-quality canned tuna. If you have leftover cooked tuna steaks, then by all means use them instead of the canned tuna.

Both Trader Joe’s and Whole Foods have excellent canned tuna packed in olive oil that work perfectly for tuna salad. (The brand I like at Whole Foods is Wild Planet.)



INGREDIENTS
1 (5 or 6 ounce) can of tuna fish (drained, if packed in water, drain it, and add a teaspoon of good quality olive oil to the tuna)
1/3 cup of cottage cheese
2 Tablespoons of mayonaise
1/4 cup finely chopped red onion
1 celery stalk, finely chopped (about 1/2 cup)
1 Tbsp of capers
1 Tbsp lemon juice
Pinch or two of dill
2 Tbsp minced fresh parsley
1 teaspoon of Dijon mustard
(optional - lettuce and sliced tomatoes)
Sliced bread, lightly toasted

METHODHIDE
Mix all of the ingredients. Serve on toast, either open faced, or in a regular sandwich with lettuce and tomatoes. For a low carb option, serve on sliced lettuce.

California Club Sandwich Recipe

This sandwich rocked! It was really good! I didn't follow any recipe, just used what I liked in a club sandwich. Ok, actually I don't order clubs when we go out, but years ago I did work in a cool Cafe and a club sandwich was on the menu. I made a mean one back then, if I say so myself! Anyways I made this a grilled BBQ sauced chicken club with avocado and bacon and veggies. Very simple. I made a few clubs and served them all on a platter family style. I was able to get 5-6 sandwiches with the amount of ingredients I used, plus a little leftover. Adjust the amounts to your liking, like I said there is not recipe, just add however much of whatever you like. (Mr. took my camera on a work assigment, so I had to use my Daughter's little thing)


Ingredients:
5 small thin boneless, skinless chicken breasts
salt & pepper (per taste)
BBQ Sauce
1 pound bacon, cooked, cooled
5 Provolone cheese slices
2 Ripe Avocados, sliced
Green leaf lettuce, cut to fit bread
2 Tomatoes, sliced
1 small Red Onion, sliced thin
Mayo
White bread slices
Wheat bread slices
Sandwich picks

Directions:

  • Season chicken with salt & pepper. Grill chicken 4 minutes per side on low-medium heat. Baste with BBQ sauce. Slice when cooled down.
  • Toast bread (3 slices per sandwich), add a little mayo then layer with lettuce, tomato, onion and avocado on the bottom layer. Add a second piece of toast with a little mayo and add chicken, bacon and cheese. Top with third piece of toast with a little mayo.
  • Secure sandwich with picks at the top, bottom and sides of sandwich. Cut the sandwich from corner to corner, so that the picks are in the middle of each triangle slice. Enjoy!
